Easy Rice Pudding

Ingredients

  • 1/2 cup medium grain white rice
  • 4 cups milk
  • 1 cup water
  • 2 Tbsp sugar (or to taste; see recipe notes)

Instructions

  1. Combine all of the ingredients in a small-medium sized heavy bottomed saucepan.

  2. Bring the mixture to a boil, stirring often. Reduce to a simmer.

  3. Cook, stirring frequently (to prevent burning) until the mixture thickens (enough to coat the back of a spoon with white) and looks a bit like tapioca pudding (with the rice floating on top). This does take a while (usually about 1-1/2 hours), so be patient!

  4. Pour the thickened mixture into a heat proof bowl or container; cover, and refrigerate. Serve cold for best results. (Note: The mixture will continue to thicken as it chills.)

Recipe Notes

If you are looking to make a sweet pudding, increase the amount of sugar in this recipe to 1/3 cup, or to your personal taste.
