Sausage and Potato Soup

This creamy sausage and potato soup is the perfect thing to warm you through on a cold day.

Ingredients

  • 5 c. water
  • 3 4-5 inch sausages I've used both Italian or smoked pork sausage - both are great options
  • 1/2 small onion
  • 1 tsp salt
  • 5 c. potatoes peeled and chopped
  • ¼ c. butter or margarine
  • 1 medium onion chopped
  • ¼ c. all-purpose flour or cornstarch
  • c. evaporated milk or cream
  • ½ c. milk
  • 1 tsp. salt
  • ½ tsp. pepper
  • ½ c. shredded cheddar cheese
  • 2 green onions washed and sliced

Instructions

  1. Put the water, sausages, 1/2 onion and 1 tsp salt into a large saucepan. Bring to a boil over medium-high heat; reduce heat, and simmer until the sausage is cooked through, about 30 minutes.
  2. Remove the sausages and onion from the broth, chop the meat, and return to the pot. Add the potatoes; return to a boil and reduce heat. Simmer, uncovered, for 5 minutes or until the potatoes are soft.
  3. Heat butter in a medium skillet over medium heat; add the other onion. Sauté until tender, about 5 minutes. Add the flour or cornstarch, and cook for 1 minute longer. Gradually stir in the milk and evaporated milk or cream. Cook, stirring continually, until thickened (about 5 minutes). Add the salt and pepper; mix well. Stir the milk mixture into the broth with meat and potatoes.

  4. Simmer over low heat, stirring frequently, about 10-30 minutes. Ladle soup into bowls, and top with cheddar cheese and green onions.
