Soft & Chewy Chocolate Chunk Cookies

This is the perfect chewy, thin, chocolate chip cookie with a crisp outer layer.

Ingredients

  • 1 cup butter softened
  • 1 cup white sugar
  • 1 Tbsp molasses
  • 2 tsp vanilla
  • 2 eggs
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/4 cup whole wheat flour
  • 1-1/2 cups all-purpose flour
  • 1-1/2 cups dark chocolate, chopped into chunks (or chocolate chips)

Instructions

  1. In the bowl of an electric mixer (or by hand), cream together the butter, sugar, and molasses. Add the vanilla and eggs, and beat until well combined.

  2. Beat in the salt and baking soda, just until incorporated, and then add the whole wheat flour, regular flour, and chocolate chips. Beat until well mixed; the dough should be thick and creamy.

  3. Drop by spoonfuls onto parchment lined baking sheets (leaving a good amount of room in between them, since the cookies will spread a lot).

  4. Bake at 350 degrees F for 8-10 minutes, or until the edges are golden brown. Cool completely before removing to wire racks.

Recipe Notes

 - For the chocolate: 1.5 cups = 225g or 8 ounces

 - You can substitute the white sugar and molasses for brown sugar if you have that on hand!
