Sourdough Cornmeal Waffles

This recipe is for crispy, hardy waffles that are prepared the night before, making them of the quickest and most delicious breakfasts you can have.

Ingredients

  • 1 cup active sourdough starter
  • 1-1/2 cups all purpose flour
  • 1/2 cup cornmeal
  • 1 tsp salt
  • 1 Tbsp sugar or honey
  • 1 cup milk
  • 1/2 cup butter melted
  • 1/4 tsp baking soda
  • 2 large eggs

Instructions

  1. In a large mixing bowl, combine the sourdough starter, flour, cornmeal, salt, sugar, milk, and melted butter. Stir until well combined, cover, and allow to rest overnight (8-12 hours).

  2. The next morning, lightly grease and preheat a waffle iron. Add the baking soda and eggs to the risen waffle batter (it should look puffy by the morning), and beat until well combined.

  3. Fry the waffles for 3 minutes or until golden. Serve fresh with your favourite toppings.
