Ingredients

  • 8 round Greek pitas

For the sauce:

  • 1 small can tomato paste 156ml, about ⅔ cup
  • 6 Tbsp water
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ tsp garlic powder
  • ½ tsp oregano

Pizza Toppings (suggested)

  • 4 6" pepperoni rods sliced
  • 1 large green bell pepper
  • 6 large mushrooms sliced
  • 7-8 cups mozzarella cheese shredded (525-600g)

Instructions

  1. Preheat the oven to 400 degrees F.

Make the sauce:

  1. Combine the tomato paste, water, olive oil, salt, pepper, garlic and oregano in a small mixing bowl. Stir until well combined, and set aside.

Prepare the toppings:

  1. Wash and chop the vegetables, cut the meat, and shred the cheese. Set aside.

Assemble the pizzas:

  1. Arrange the pita breads and prepared toppings on a clean work surface in front of you. Spread each pita with a thin layer of sauce, and then sprinkle to cover with mozzarella cheese.

  2. Scatter with your favorite toppings, and bake for 10-15 minutes or until the cheese is melted bubbly. Serve warm.

Recipe Notes

Note: The pans are lined with parchment paper in this tutorial, but this is only necessary if you want no-fuss cleanup. The pizzas will not stick unless the cheese is spilling off the sides.
