Easy Peach Cobbler

This is one of the fastest and most satisfying desserts to make on a summer day! Cobbler is delicious served warm or cold, and it can be made ahead, frozen, and baked fresh whenever you feel the need.

Ingredients

  • 4-6 peaches or enough to generously cover the bottom of your pan
  • 1/4 c. butter (+1 extra tsp) softened (if using unsalted butter, add a generous pinch of salt)
  • 1/4 c. sugar
  • 1/2 c. flour
  • 1/4 tsp. vanilla

Instructions

  1. Preheat the oven to 350 degrees F.

  2. Grease the bottom of an 8" square baking dish with 1 tsp butter.

  3. Combine the 1/4 c. softened butter with sugar, flour, and vanilla in a bowl. Rub between your fingers until all of the ingredients are well incorporated and crumbly. Set aside.

  4. Wash, peel and chop the peaches. Fill the bottom of the greased pan with peach slices, making sure you have enough slices to make at least a 1" layer of fruit. Crumble the topping evenly overtop.

  5. Bake for 30-35 minutes or until the edges are just golden and the mixture is bubbly. Serve warm or cold.
