Easy Peach Cobbler [Recipe]

Have you ever had peach cobbler? Regardless of the answer to that question, be excited: because today is a day for something great!

If you have been searching for a great peach cobbler recipe, I’m happy to tell you that you’ve found your gold. The base is pure fruit, and then the topping adds the sugar complement you’ve been craving along with just enough flour and butter to thicken the base a little bit and add the most delicious, warming flavour.

If you aren’t familiar with this, cobbler is a lot like fruit crisp, except that instead of a rich oatmeal topping this one has a lighter, more buttery sweet topping.

As I write this, I’m inching closer and closer to delivering my second baby, and I can’t tell you how tempted I am to make one or two of these to go in my freezer! This would be an easy thing to prep ahead and then just pull out and bake whenever the craving hits. But, since I’m guessing the craving would hit me every day until I’ve eaten it all, I’m going to resist and just prep mostly “real food” to freeze for when baby comes.

Easy Peach Cobbler

This is one of the fastest and most satisfying desserts to make on a summer day! Cobbler is delicious served warm or cold, and it can be made ahead, frozen, and baked fresh whenever you feel the need.

Ingredients

  • 4-6 peaches or enough to generously cover the bottom of your pan
  • 1/4 c. butter (+1 extra tsp) softened (if using unsalted butter, add a generous pinch of salt)
  • 1/4 c. sugar
  • 1/2 c. flour
  • 1/4 tsp. vanilla

Instructions

  1. Preheat the oven to 350 degrees F.

  2. Grease the bottom of an 8" square baking dish with 1 tsp butter.

  3. Combine the 1/4 c. softened butter with sugar, flour, and vanilla in a bowl. Rub between your fingers until all of the ingredients are well incorporated and crumbly. Set aside.

  4. Wash, peel and chop the peaches. Fill the bottom of the greased pan with peach slices, making sure you have enough slices to make at least a 1" layer of fruit. Crumble the topping evenly overtop.

  5. Bake for 30-35 minutes or until the edges are just golden and the mixture is bubbly. Serve warm or cold.


So delicious! My favourite way to eat this is warm, fresh from the oven.
