Ingredients

  • 3 c. strawberries washed
  • 6 Tbsp water
  • 1/2 cup sugar
  • 3 Tbsp. lemon juice
  • 1 Tbsp. corn starch mixed with 3 tsp water

Instructions

  1. Place the berries, 6 Tbsp water, and sugar into a saucepan and cook until boiling and the berries are soft. Stir in the lemon juice.

  2. In a separate bowl, mix the corn starch with water to make a paste; add this to the boiling fruit mixture, stirring as you pour it in.

  3. Cook 1 more minute, or until thickened and the mixture coats the back of a spoon. Remove from heat, cool, and refrigerate. Serve cold.

Note: The mixture will thicken further as it cools.
