Kiwi Honeydew Smoothie Bowl

This vegan smoothie is a definite winner! Try adding some matcha green tea powder to give it a little something extra - Or just make it as is! It's simple, delicious, and bright-green beautiful.

Ingredients

For the smoothie:

  • 1 cup kiwi peeled, chopped, and frozen (about 3 whole)
  • 1 cup honeydew melon chunks frozen
  • 2 large handfuls raw spinach washed
  • 1 large banana
  • 1/4 cup coconut milk or coconut cream

For the toppings:

  • 1/2 kiwi sliced
  • 1/2 banana sliced
  • 2 Tbsp chia seeds
  • 2 Tbsp shaved coconut toasted

Instructions

For the smoothie:

  1. Combine all of the smoothie ingredients in high-powered blender. Pulse 3-4 times, and then blend until smooth.

Assembling the bowls:

  1. Divide the smoothie evenly between two 12-ounce bowls. Decorate with fruit slices, chia seeds, and shaved coconut. Serve immediately.
