Healthy Cauliflower Alfredo [Blog Review & Recipe Link!]

Hey guys!

This week I want to share this recipe from another blog. I’ve been a fan of this one for a while now, but this is my first time actually making one of their recipes! The blog I’m talking about is called Pinch of Yum, and it seems like the couple who run it are just the nicest people ever with SO MUCH TALENT. They make me feel insecure about my blogging abilities, but in an inspiring kind of way.. if that makes any sense. You will definitely want to click on the link above and go check it out!

That said, I’ll move on to my review of this recipe! The one I made is called Creamy Cauliflower Sauce, which is supposed to be used however you want to use it: as a healthy alternative to alfredo (as I did), or for any number of other things… But I’ll let you look at their blog to see what their other suggestions are… they look amazing!

I’ve been realizing that I don’t do a lot with sauces in my life, and I’d like to learn more this coming year. So, here’s my first go at branching out in the sauce department – and I can’t say I’m disappointed! This one tasted every bit as good as it looks. And I have the confirmation of 6 of my siblings, and my husband, to confirm that opinion.

Here are my notes on this recipe:

1. It’s delicious and I am very happy that I have extra leftover in the freezer for later. Yay!
2. It actually makes quite a bit! For whatever reason I didn’t pay attention to the quantity it would produce… so again, I’m thankful I have some extra to go in my freezer, but really – this is a lot more than I needed for just me and my husband. Hence, the feeding of the 6 extra people. Yes, big families are fun. 🙂 But honestly, I’ll probably make a 1/2 batch next time.
3. The recipe calls for vegetable stock or water, which would make this a nice vegetarian option- but I used chicken broth (which I had on hand and wanted to use up) and it was de-lish!
4. I might cut back on the garlic next time… It was VERY strong! I love garlic, so fortunately that didn’t make it less worth raving about… but it was pretty strong and I think I might do less next time. Maybe 1/2 the amount.
5. I only used 4 cups of broth/water instead of the 6-7 cups suggested, and my sauce consistency was perfect, if not a little thinner than I expected. That said, her recipe does say to start with 1 cup of liquid and add more as you need it, so yeah – do that.
6. I used cream instead of milk… Mm. Again, I had to use it up – and it was very, very good.

I prepared this recipe by making the sauce, heating it in a pot (because I feel nervous about blending blazing hot things), and then mixing it with linguini pasta (which I just like better than fettuccine, so… yeah). Then I topped it off with parmesan cheese, paprika and cilantro. Mm. So good. I wasn’t sure if the cilantro would taste that good with this, if I’m honest – but it was the only green garnish I had, and truth be told… it was delicious. I don’t regret.

Anyway! That’s all my rambling for today! Thank you Lindsay and Bjork for the great work you do! You’re an inspiration, and my life (and hopefully the lives of those reading my blog) has better food in it because of what you do.
