Lemon Poppyseed Tea Cookies [Recipe]

Lemon usually seems like much more of a spring/summer thing. However, regardless of the season, tea parties with sugar cookies are always a good idea. Am I right? Which is why this recipe for lemon poppyseed tea cookies can go up on my blog in the fall, and I don’t mind at all. Any type of sugar cookie is welcome at my table!

I find myself daydreaming about happy memories to make with my children as they grow every day. This is a sweet season of life; with a one-year-old and a two-month-old, I’m so thankful for the sweet bliss of innocent joy filling my home. Especially while the world outside our doors feel more and more frightening. At least right here, right now, we have peace. And I’m so thankful for the opportunity to make these memories with my family.

Tea parties are one of those things that I grew up having and loving, and they are something I’d like to make special for my kids as well. This recipe is a perfect tea party accompaniment. I like to make these cookies with a small round or shaped cookie cutter so that you can eat several of them, or several other things in addition to them, while still feeling dainty. The lemon zest in them makes them taste extra fresh, and I love the little bit of crunch from the poppyseeds.

My favourite cookie cutters to have on hand for this recipe at different times of year:

Multi-sized round cutters (for every season- including mini ones, like I’ve used for this recipe)
Spring themed cutters
Summer themed cutters
Fall themed cutters
Holiday winter cutters

For these unique sugar cookies, you can either use a hand-held zester, the zester side on a box cheese grater, or my favourite, a good quality fine zester. To juice your citrus, I recommend getting a good manual juicer like this one. Also, as I often do, I’m using a KitchenAid Stand Mixer to make the dough for this post, but you can easily make this recipe by hand as well.

Lemon Poppyseed Tea Cookies

These cookies are light, crisp, and refreshing. Perfect to serve with tea.

Ingredients

  • 1 cup butter softened (if using unsalted butter, add ¼ tsp. salt)
  • 1 cup sugar
  • 1 tsp. vanilla
  • 2 large eggs
  • 2-1/2 cup flour
  • 2 Tbsp poppy seeds
  • 1 lemon zested and juiced (juice set aside for the glaze)

Lemon Glaze

  • 1 cup icing sugar
  • 2 Tbsp lemon juice

Instructions

  1. Cream the butter and sugar together in a medium-large mixing bowl. Add the poppy seeds and lemon zest. Beat in the egg, and then mix/knead in the flour until the mixture comes together into a soft dough.

  2. Cover the dough with plastic and refrigerate at least 2 hours, or overnight, till cold.
  3. Remove the dough from the fridge, knead to soften slightly, and roll out on a surface dusted with flour. Keep the dough from sticking by periodically lifting the dough to dust more flour underneath, and rotating the dough regularly to keep it from sticking too much. You will want it about ¼-inch thick by the time you are done.


    Tip: I usually roll the dough a couple of times in each direction, and then lift it or move it to dust underneath. Repeat this until you reach the desired thickness.

  4. Dip the sharp edge of your cookie cutters into the flour, and press into the dough, close together (but be careful not to cut into other cookies!) so that you get the most number from the dough that you can.
  5. Lift the cookies onto parchment or wax paper lined cookie sheets. Collect the leftover scraps into a ball; re-roll and cut, the same as before. Repeat until you have the dough used up. 


    Tip: When you get down to the last little bit of dough, I usually just roll the rest of it into little balls and flatten them into little round cookies with a fork or my fingers.

  6. Bake at 350 degrees F (or 170 degrees C) for 8-12 minutes or until just golden around the edges of some of the cookies. Cool on wire racks. 
Glaze.

    Note: The cookies will spread, but not a lot – you can put them pretty close together to bake.

Lemon Glaze

  1. Combine the icing sugar and lemon juice in a small bowl; stir until smooth.

  2. Dip the cookies upside down into the glaze and gently smooth the tops by scraping them against the side of the bowl.

  3. Set the cookies right side up on cookie sheets to dry, about 2 hours.

  4. Gently touch the surface of the cookies to make sure the glaze has set before storing in airtight containers.

If you want to try other variations of these sugar cookies, try making them with orange or lime zest and juice in place of the lemon.
