Miniature Apple Turnovers [Recipe]

This is the time of year that I just want to make apple everything. I want to go apple picking, and then come home and make applesauce, apple butter, rhubarb apple pie, apple muffins, apple crisp… the sky’s the limit! Also, I have to say, the smell of fresh baked apple things and cinnamon at this time of year is unbeatable.

Are apple turnovers difficult to make?

Not at all. This is one of those apple favourites that is actually remarkably easy to make! You can go the “Super easy” route of buying pre-made puff pastry and apple pie filling, or you could go with my recipes… But either way, the amount of work involved in creating these pastries is actually quite simple.

As always, I do recommend going with the homemade stuff – the flavours are always so much better, and the rewarding feeling of creating something like this is unbeatable!

Can apple turnovers be made ahead of time? 

Again, yes! As I write this, I have a bag of fully prepared, unbaked apple turnovers in my oven. You can bake them from frozen and have beautiful, hot, fresh tasting turnovers which you literally made months in advance! Just be aware that if you bake them from frozen, they may need a few extra minutes in the oven to brown up.

What is the best way to freeze turnovers ahead of time?

Just prepare the turnovers up to the point of baking, and instead of putting them in the oven, set your cookie sheet in the freezer until they are frozen through. Next, remove the frozen pastries from the baking sheet and place them directly into a freezer bag or sealed container. Return them to the freezer until you’re ready to bake them!

Filling Variations

My apple pie filling recipe is packed with flavour and makes these turnovers extra good! If you would rather try some variation, however, try using one of these fillings instead:

Here’s how these are done!

Miniature Apple Turnovers

This little turnovers are packed with the beautiful blend of apple pie filling and buttery pastry.

Ingredients

  • 1/2 batch puff pastry see recipe notes*
  • 3/4 cup apple pie filling see recipe notes*
  • 1 egg beaten
  • coarse sugar for sprinkling

Instructions

  1. Preheat the oven to 400 degrees F, and line 2 baking sheets with parchment paper. Set aside.
  2. On lightly floured work surface, roll your pastry out into a 16" square, about 1/8" thick. Cut into 16 smaller squares. (If you want to make larger turnovers, cut the square into 9 instead).

    Tip: If you're having trouble rolling the pastry thin enough, try turning it over on a fresh dusting of flour and rolling it from the other side.

  3. Spoon about 1/2 Tbsp. apple pie filling (or 1 Tbsp for larger turnovers) into the centre of each square, and brush 2 of the edges with a little bit of water (not too much, just enough to moisten them).

  4. Fold the pastry over, corner to corner, sealing the moistened edge to the plain one and forming a little triangle shape. Pinch the edges lightly to encase the filling, and then use a fork to crimp the edges and seal them really well. It's important not to over-fill the turnovers so that the filling doesn't spill out and damage the seal.
  5. Place the triangle shapes onto prepared pans, brush with egg wash, and sprinkle with coarse sugar. If desired, cut a little slit into the top of the pastry.
  6. Bake for 20 minutes or until golden brown and puffy. Cool on wire racks. Serve the day they are made.

  3. You can make these ahead of time by preparing them completely, freezing them, putting the frozen pastries into sealed bags or containers to store, and then baking them right from the freezer. Just note that they will likely take a little longer to bake if you do that, so plan a little extra time for baking!

That’s it! Fresh, buttery, apple-y goodness. Simple as can be.

If you decide you’d like to make these as larger turnovers, just cut the pastry into 9 squares instead of 16, and put a little extra filling in the middle. They should take about the same amount of time to bake – just until they’re nice and golden!
