Bagel Sandwiches, Round 1: Toasted Tomato-Egg [Recipe]

Making so many bagels for the past little while has made bagel sandwiches a must. Since I’ve made so many, I’ve tried many many bagels with a variety of toppings – And just to spark your imagination, I’m gonna share my creations, or at least some of them, on here.

True, it *does* seem a little silly to write out a sandwich recipe… But at the same time, when you make a good sandwich, sometimes people wanna know how it was done. This one… Is de-lish. Super simple, yes – but so so delicious. Try adding bacon to this for a little extra happiness.

And yeah, I would write more than that because a blog post without more to say than those few words seems… pointless. But I’m going to assume that you’re mostly here to see what I put on this good looking sandwich, so without further ado… I shall oblige.

Toasted Tomato Egg Sandwich

A deluxe twist on the classic toasted tomato sandwich - On a homemade bagel!

Ingredients

  • 1 Parmesan Sage Bagel (Recipe link in "Notes")
  • 2 Tbsp cream cheese
  • 1 egg
  • 2 slices tomato
  • 1 leaf lettuce
  • 1 Tbsp red onion thinly sliced
  • salt and pepper to taste

Instructions

  1. Slice the bagel in half, and toast until the desired darkness.

  2. Fry the egg in a bit of butter with salt and pepper.

  3. Spread the bagel with cream cheese, and add the additional toppings. 

  4. Enjoy!
