Easy Homemade Raspberry Sauce [Recipe]

I love red raspberries, and this raspberry sauce recipe is one of the simplest things to make.
 
Here is a recipe that I find myself always coming back to it for a million and one reasons. It makes a delicious topping for just about any dessert, and it can be tweaked slightly (see my recipe notes) to be a delicious red raspberry pie filling as well! 
 

Is it better to use fresh or frozen berries for this recipe?

You can use either one; in fact, I’m not sure that it makes any difference at all! If you have an abundance of fresh raspberries on hand, check my out tutorial for Perfect Frozen Fruit to have them ready on hand whenever you want to make something with them. 

Can this raspberry sauce be made without cornstarch?

Absolutely. My favourite substitute would be tapioca starch; however, you can use regular tapioca (or even just regular flour) to create a lovely thick raspberry sauce. Just note that sauces thickened with flour will have a more “Cloudy” appearance, which I don’t find as pretty.
 

How to preserve raspberry sauce

I like to make this recipe ahead of time and then use my Basic Canning Method to keep it for the future. You can also freeze this recipe, but you will want to re-heat it if you do, since it will separate and come out a sort of odd texture after it’s been frozen.
 

Can this recipe be used for other types of fruit?

For sure! One thing I love about this recipe is that it can be adapted to almost any kind of fruit… The basic idea works pretty much every time!

How raspberry sauce is made

My simple sauce recipe is made by cooking down fresh or frozen fruit with sugar, water, and lemon juice until it reaches a liquid consistency. Once I have reached that point, I bring the mixture to boil and slowly add some cornstarch, thinned to a liquid paste with water, into the fruit. Within minutes, the sauce will thicken, and then it can be cooled! This sauce is ready to use once it has cooled completely, which is when it reaches its thickest point.

This recipe is the ideal topping for cheesecake, ice cream, homemade waffles, or you-name-it. You can even add a little extra cornstarch (use rounded tablespoons) to make a delicious raspberry pie filling! This recipe makes about 2 cups of sauce.

Ingredients

  • 2 c. fresh or frozen raspberries
  • 1/4 c. water
  • 1 Tbsp. lemon juice
  • 1/2 c. sugar
  • 2 Tbsp. cornstarch mixed with 2 Tbsp water to form a smooth paste

Instructions

  1. Place the raspberries (washed if you're using fresh ones) in a small saucepan. Add the water, lemon juice, and sugar; cook over medium heat, stirring every so often to prevent burning.

  2. In the meantime, combine the cornstarch with water and stir until the mixture forms a smooth paste. When the raspberry mixture comes to a boil, slowly pour in the cornstarch, stirring as you go.

  3. Cook the raspberry sauce until thickened (it should coat the back of a spoon).

  4. Pour the mixture into a glass bowl (not too quickly, otherwise the glass could crack), and cover with a piece of plastic wrap set directly on top of the fruit. Refrigerate until cold, at least 2 hours.

  5. Serve as a topping for ice cream, cake, waffles, or whatever you like. This filling is also delicious served in place of jam, or thickened slightly more for a delicious raspberry pie filling (see recipe notes).

Recipe Notes

To make raspberry pie filling:

Use rounded tablespoons of cornstarch instead of level ones. Prepare this recipe as directed.

 

To make raspberry pie:

Pour into a prepared pie crust, dot with butter, and add a top crust. Slice out some heating vents into the top crust and bake at 450 degrees F for 15 minutes. Reduce the temperature to 375 degrees F and bake for 30-35 minutes more, or until golden brown. Cool completely before serving.
